  • 2 cups of fresh kupang (clams)
  • 1 tablespoon of cooking oil
  • 2 cloves of garlic, minced

  • 2 tablespoons of tamarind paste
  • 2 tablespoons of sweet soy sauce

  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 2 cups of coconut milk
  • 1 teaspoon of lime juice
  • 2 tablespoons of fresh coriander, chopped
  • 4 cups of cooked lontong (rice cake)


1. Heat the cooking oil in a large pan over medium heat. Add the garlic, ginger, lemongrass, and turmeric powder. Stir-fry for 1 minute.

2. Add the fresh kupang and stir-fry for another 2 minutes. Add the tamarind paste, sweet soy sauce, chilli powder, sugar, and salt. Stir to combine.

3. Pour in the coconut milk and bring to a gentle simmer. Lower the heat and simmer for 10 minutes until the kupang is cooked through. Remove from the heat and stir in the lime juice and fresh coriander.

4. To serve, divide the cooked lontong into 4 bowls and top each with the kupang and coconut soup. Serve hot and enjoy!
